Letter From The Editor

Metro-030416-editorYou might not recognize the name Free Spirits, but it’s likely that this mobile bartending service has served you up a few. The business, created by Matt Choy and Derrick Stevens, provides the booze for a ton of large events that happen around town. Eat The Street, Honolulu Night Market, ARTafterDARK—those are all these guys.

Obviously, things often get busy for the Free Spirits team (for one, they work Eat The Street and ARTafterDARK on the same night), but what seems to keep them going is a genuine love of serving drinks and helping make these events what they are. As Stevens put it: “When you are a bartender, you’re crafting something, you are giving a piece of yourself away to that person who is going to partake in what you’re serving.”

This week, we got to chat with Choy and Stevens about their work and what’s to come.

What goes better with alcohol than pizza? This week, food writer Jaimie Kim gives us a look into Pieology, a newly opened pizzeria. Pieology allows you to create your own pie (think Subway or Chipotle but with pizza) from a whole slew of tasty options. See what Jaimie has to say about it — and check out some drool-inducing photos.
