The Kahala Hotel & Resort opened more than 50 years ago, so, as bartender Anji Brittain explains, many of the property’s signature drinks have been around for a long time. Among them is The Royal Pine, which utilizes fresh hollowed-out pineapples for a fun, refreshing take on a tropical cocktail.

When you’re not here, where do you like to go out?

I like lounge kind of places. Buho in Waikiki is one of my favorites. Formaggio’s, Uncle Bo’s as well.

What’s the oddest drink request you’ve had?

I think it’s always interesting when people try and come up with their own drinks. Someone recently wanted something called a “mintchelada,” which was basically beer and tomato juice.
