“When you eat a lilikoi, you first bite into it, it’s bitter from the rind, and then the finish is nice and sweet. So that’s the idea behind the cocktail. I just like lilikoi. When I found out about passionfruit vodka, I wanted to recreate eating a lilikoi in a drink form.

“(Creating the Lotus) might have been a one-try thing. A group of girls wanted shots, and I had the concept in my head, so I went for it. They liked it, so I turned it into a drink.

“The Peychaud’s is a little bit sweeter, but it still has, obviously, that bitter finish, and the citrus helps push the lilikoi flavor through.

“It’s very dangerous. It’s like a punch. It’s easy to drink.”
