Q&A: Christian Self Of Bevy
Bevy in Kakaako opened its doors in 2013, drawing guests from all over the island to its rustic yet chic space. Christian Self, who co-owns the bar with Timothea Lee, recently took some time to chat about the hotspot he’s created.Barkeep (BK): What is the atmosphere typically like at Bevy?
Christian Self (CS): It depends on the hour; early is relaxing and chill — a place to hang out and have conversation. Late on the weekends, the DJs kick up the tempo for more of a party and fun atmosphere.
BK: What are the most popular drinks?
CS: Everyone loves the Moscow Mule; it is an easy and refreshing cocktail that has a broad appeal. The 2010 World’s Best Mai Tai is also a favorite. However, a lot of people come for our creations that the staff expertly concocts fresh daily.
BK: What is your personal preference?
CS: Writing the menu means that, if a drink made it on there, then it is one of my favorites. I think there are the right drinks for the right occasions and the right moods.
BK: Which foods on your menu pair well with certain drinks?
CS: Our steak is a cocktail-marinated steak, so naturally it pairs well with the 1919. Our oysters go well with a French 75, but we can pair cocktails with our food, depending on our guests’ tastes.
BK: Where does Bevy draw inspiration?
CS: Bevy is the brainchild of Ms. Timo Lee and myself. We wanted to create a bar that could be found in San Francisco or New York. The decor reflects the urban renewal of the Kakaako area. We also wanted to create a place that could be the neighborhood (bar), where people can gather and be part of a group.
BK: Where do you draw your inspiration from as a bartender?
CS: I’ve been a bartender for about 15 years, and I’m still learning all the time. I get my inspiration from a wide variety of places, but mainly from my experiences.
BK: What would you like the general public to know about Bevy that they don’t?
CS: That’s it! They can come and experience Bevy, and hopefully they will enjoy themselves.
